Sushi (すし, 寿司, 鮨) is a Japanese dish comprised of cooked rice combined with other ingredients such as seafood, various vegetables, and even tropical fruit. The most well-known type of sushi contains raw meat, especially fish; if served without the rice, the raw meat (typically fish or beef) is called sashimi (刺身). Compared to the rice used in onigiri, which is plain, the rice used in making sushi is flavored with vinegar, sugar and salt.

Chirashizushi (ちらし寿司, "scattered sushi) consists of rice topped with raw fish and vegetables. Due to its simple composition and short preparation time, it is a common meal, and is especially popular during Hinamatsuri.
